Ingredients needed
chopped head of cauliflower
2 chopped soaked potatoes
onion chopped
tomato or tomato paste
green chilis or similar
ginger, garlic paste
spices, masala, curry

The Indian Healthy Recipes page has a method for doing everything in one-setting to get soft but tasty potatoes and slightly crunchy cauliflower
but it seems easier to shallow fry the potatoes and cauliflower separately then set them aside to make the masala paste
shallow fry cauliflower in neutral oil until crunchy, set aside
shallow fry potatoes in neutral oil until crunch, set aside
oil: hot
cumin seeds: until they crackle
ginger, garlic, chili: saute 30 seconds for aromatics
onions: saute until translucent
tomato paste, curry spices, mix in cook down
mix in aloo and gobi
finishing spices, masala, chopped coriander
